Unique property: high endothermicity of dissolution → cooling sensation upon contact with skin (endothermic reaction absorbs heat). Functions in cosmetics: moisturizer (4 hydroxyl groups), cooling agent (milder than menthol), stabilizer for preservatives, cryoprotectant. Safe: not fermented by oral bacteria (used in the food industry as a non-cariogenic sugar substitute).
