What is it?
Sodium copper chlorophyllin is produced by saponification of chlorophyll (from plants including alfalfa and Spirulina) and substitution of the central magnesium ion with copper. The copper complex is more stable than natural chlorophyll and provides the characteristic vivid green color to products. It's water-soluble, unlike natural chlorophyll which is fat-soluble.
