What is it?
Black Garlic Extract — a fermentation product in which the process of thermal fermentation significantly increases the concentration of S-allylcysteine — a water-soluble sulfur-containing compound with powerful antioxidant activity, which is present in much smaller amounts in regular raw garlic. Mechanism: fermentation also eliminates the characteristic sharp smell and irritating properties of raw garlic (allicin), preserving and enhancing the beneficial antioxidant components. This makes black garlic extract an attractive alternative for cosmetic use compared to native garlic.
